アカバナユウゲショウ、学名はOenothera rosea 、Oenotheraはギリシャ語のoinos（酒）＋ ther（野獣）が語源のそうです。日本には明治時代にアメリカから渡来。暑い夏に、清々しい可憐な姿を届けてくれます。日本酒業界では明治時代、大きな技術史的変化がありました。1910年、何と山廃が生まれ、1911年には速醸が生まれました。確かに、技術革新ではあるのですが、この時点で最も大切なものを失っています。技術革新の難しさです。学生時代、他大学ながら、J.A. Schumpeter研究の第一人者である塩野谷裕一先生に無理なお願いをして、J.A. Schumpeter学会の末席に入れて頂きましたが、技術革新はとても難しいと思いました。日本では古くから当たり前の様に様々な技術革新が行われて来ましたが、どの様な連続性を持たせるか、変えるにしても、どの様な変え方が望ましいか。新しければ良いと言うものでは無いだけに、尚更です。弊社は山廃を組み入れませんでした。やはり、生酛と言う技術革新の素晴らしいさ、何ものにも変え難い醸造方法として、今日までの受け継がれています。5-アミノレブリン酸もそうですが、あまりにも深く、未だ未だ深耕の足りなさを感じています。これからも塩野谷先生、Schumpeterの様に、その真価をこれまで以上に体感できる様努めたいと思っています。

In Japan, various technological innovations have been carried out as a matter of course since ancient times, but what kind of continuity do you want to have, and what kind of change is desirable? It’s even more so, just because it’s not good if it’s new. Our company did not include Yamaki. After all, the wonderfulness of technological innovation called raw, and as a brewing method that is difficult to change from anything, it has been passed down to this day. 5-Aminolevulinic acid is the same, but it is too deep, and I still feel that deep cultivation is not enough.
